At Illahe, their goal is to make wine as naturally as possible from the soil to the bottle. This requires working by hand on small lots with age-old techniques and materials. The grapes are hand-picked, native yeast is used for fermentation and the wines are barrel aged.
The wine offers aromas of strawberry and blackberry then broaden along the palate to include chalk, tobacco leaf, chocolate, and earth.
