From the Armato family in Liguria.  Finesse is the best word to accurately describe the product coming from mill of the Armato family.  This oil is produced exclusively from the taggiasca olive where all Ligurian oil must be at least 75% to be labeled as such, while this oil from the Armato family is 100%!

"S-ciappa" in Ligurian dialect refers to a "free run" oil produced from only the first oil to run from just the weight of the millstone being laid on the freshly harvested olives, prior to any willful pressing at all.  Also, and perhaps most importantly, the oil is of the lowest possible acidity imaginable (0.01%).  The ultimate finishing oil, this deserves to adorn all crudite', charcuterie, salads, fish and the like as well as for cooking.
