From the Chavaroche vineyard. This wine is aged for between two or up to three years prior to bottling. It is, quite simply, a ferocious wine, unique in its uninhibited expression of the smells and flavors of the appellation. A serious mouthfull of earth and brambly, leathery, deep, dark and brooding fruit. The aromas explode in the glass, leaving you wondering whether you should drink it or just keep putting your nose in it. Dark berry compote flavors, with slow-building cured meat and mocha flavors carrying into the finish, along with a jolt of cracked pepper. Drink with stews, lamb shanks, grilled meats...
